Makes 12 Drumsticks
The simple, crowd-pleasing sauce for these easy grilled chicken legs can be made up to a week ahead.
½ cup hot sauce (such as Sriracha)
½ cup unseasoned rice vinegar
¼ cup strawberry jelly
12 Smart Chicken drumsticks
*Mirin is a sweet Japanese rice wine. Find it in the Asian foods section of your grocer.
In a small saucepan over high heat, bring hot sauce, rice vinegar, mirin, and jelly to a boil. Reduce heat to medium and simmer until thick and reduced to ¾ cup, about 10 minutes.
Meanwhile, generously season each drumstick with salt. Grill drumsticks, turning frequently, about 30 minutes.
To a large mixing bowl, add drumsticks and ¼ cup of the sauce and toss to coat. Return drumsticks to grill and continue cooking until skin is crisp and begins to brown, about 8 minutes. Brush with additional sauce and serve.
