Sheet Pan Chicken Fajitas

This recipe combines Smart Chicken tenders with fresh bell peppers and baked in one pan for a simple and easy weeknight dinner. Serve with tortillas or over cauliflower rice as a low-carb option.

Ingredients

  • 2 pounds Smart Chicken Tenders

  • 1 red bell pepper (cored, seeded and sliced into strips)

  • 1 yellow bell pepper (cored, seeded and sliced into strips)

  • 1 orange bell pepper (cored, seeded and sliced into strips)

  • 1 red onion, sliced into strips

  • 1 tablespoon chili powder

  • 1 tablespoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon kosher salt

  • 1 teaspoon black pepper

  • 1 teaspoon fresh garlic, mined

  • 3 tablespoons canola oil

  • ¼ cup cilantro, chopped

  • Lime wedges for garnish

  • 6-8 (8”) tortillas

Directions

Preheat oven to 425°F. Prep all vegetables and combine in a large bowl with Smart Chicken Boneless Skinless Tenders. In a separate dish, combine chili powder, cumin, paprika, kosher salt and black pepper. Sprinkle seasoning mixture over the chicken and peppers. Add garlic and oil and massage seasonings and oil making sure to coat the chicken and vegetables. Place mixture on a greased sheet pan and bake for 25-30 minutes or until chicken has reached an internal temperature of 165°F. After cooking is complete, garnish with chopped cilantro and limes. Serve with tortillas and toppings of choice.
