Pressure Cooker Moroccan-Spiced Chicken and Couscous

When you’re tired of the same boring meals, this easy, Moroccan-inspired, pressure cooker recipe packs all the flavors of North Africa.

Ingredients

  • 2 Smart Chicken thighs

  • 4 Smart Chicken drumsticks

  • Kosher salt and freshly ground black pepper, as needed

  • 2 tablespoons olive oil

  • 1 small onion, diced

  • 4 garlic cloves, sliced

  • ¼ cup dried harissa or harissa paste

  • 1 cup green olives

  • 1 lemon, peeled and sliced

  • 5 Roma tomatoes, diced

  • 1 cup raisins

  • 4 cups couscous, cooked

  • ¼ cup chopped fresh parsley

Directions

Season the chicken liberally with kosher salt and black pepper. Turn a pressure cooker to the sauté function and add the olive oil. Sear the chicken until golden brown on all sides. Remove the chicken. In the pressure cooker, sauté the onion, garlic, and harissa for about 5 minutes. Add the olives, lemon, tomatoes, and raisins. Pressure cook on high for 20 minutes. Release pressure. Mix the couscous with the parsley and serve the chicken over the couscous.
