Oven Baked Chicken Cheeseburger Egg Rolls

These baked chicken cheeseburger egg rolls are easy to make and fun to eat! Crispy on the outside and loaded with cheesy tender chicken on the inside, your entire family will love this recipe.

Made from a few simple ingredients, you can have these tasty egg rolls on the table in no time. Dip them in your favorite sauces like ketchup, mustard or even mayonnaise just like you would a traditional cheeseburger.

Ingredients

For the Egg Rolls:

  • 12 egg roll wrappers

  • 1 tablespoon olive oil

  • 1 lb. ground chicken, Smart Chicken

  • ¾ cup yellow onion, diced

  • 2 teaspoons garlic, minced, about 2 cloves

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

For the Cheese Sauce

  • 2 tablespoons butter

  • 1 tablespoon AP flour

  • ½ cup 2% milk

  • ¼ cup chicken stock

  • ¼ cup mozzarella cheese, shredded

  • 4 ounces Velveeta cheese, cubed

Special Sauce

  • ½ cup mayonnaise

  • ¼ cup ketchup

  • 1 tablespoon yellow mustard

  • ½ teaspoon white vinegar

Directions

Preheat the oven to 425°F. Line a baking tray with parchment paper and set it aside.

For the Cheese Sauce: Heat a sauce pan over medium heat. Add butter and flour to the hot pan to form a roux. Whisk well. Slowly add the milk followed by the chicken stock. Whisk to ensure it is well combined. Next, you’ll add the mozzarella cheese and cubed Velveeta cheese. Continue whisking until well combined. If the sauce gets too tight, reduce the heat and add a touch more chicken stock. Remove from the heat and set aside.

For the Chicken Mixture: Next, add one tablespoon olive oil to a hot sauté pan. Add the diced onion and minced garlic. Sauté for 4-5 minutes or until the onion is translucent and the garlic is fragrant. Then, add Smart Chicken’s ground chicken. Season it with salt and black pepper. Sauté until the chicken is cooked through. You’ll want it to be 165°F to ensure doneness.

Combine: Pour the cheese sauce over the cooked chicken mixture. Gently fold everything together.

Build the Egg Rolls: Grab one egg roll wrapper and place it on your clean work surface in a diamond shape. You’ll want one of the corners to be facing you. Add ¼ cup of the cheesy chicken filling. Fold the corner closest to you over the top of the filling. Fold in the sides and roll the egg roll like a burrito. Place it on the baking tray. Repeat for all egg rolls. Generously spray the egg rolls with olive oil cooking spray. Bake for 15-20 minutes flipping them halfway through. Serve with the special sauce and enjoy!
