Napa Cabbage & Chicken Salad With Toasted Sesame Dressing

Serves 4

Ingredients (for the salad)

  • 1 small bunch kale, stems removed and thinly sliced

  • 1 pound boneless skinless Smart Chicken tenders or breasts, poached and shredded

  • 1 small head Napa cabbage, shredded

  • 1 head baby bok choy, thinly sliced (optional)

  • 2 carrots, shaved

  • 2 tablespoons sesame seeds


In a large bowl, combine the kale, shredded chicken, shredded cabbage, bok choy, and carrots and toss. Add Toasted Sesame Dressing (recipe follows) and toss to coat. Serve with toasted sesame seeds over top.

Ingredients (for the Toasted Sesame Dressing)

  • 1 tablespoon olive oil

  • 1 tablespoon toasted sesame oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon maple syrup or honey

  • 1 tablespoon soy sauce

  • 1 clove garlic, finely minced


Combine all ingredients in a bowl or jar and whisk or shake until emulsified.
