Healthier Chicken Street Tacos

Serves 4 to 6

Ingredients

  • 1 pound Smart Chicken tenders

  • 12 small flour tortillas

  • ½ cups cotija cheese

Ingredients (for the Marinade)

  • 1 tablespoon canola oil

  • Juice of 1 lime (about 2 tablespoons lime juice)

  • 1 teaspoon finely minced garlic

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • ¼ teaspoon cayenne pepper

  • ½ teaspoon salt

Simple Pico de Gallo

  • 2 cups fresh tomatoes, diced

  • 1 cup red onion, finely diced

  • 1 jalapeño, seeds removed and finely chopped

  • 2 tablespoons fresh cilantro, finely chopped plus more for serving as needed

  • ½ teaspoon salt

Directions

In a bowl or baking dish, combine all marinade ingredients and mix well. Submerge the chicken in the marinade, toss to coat, cover, and refrigerate for one to two hours.

Meanwhile, in a medium bowl, combine all pico de gallo ingredients and mix well. Cover and refrigerate until ready to serve.

When ready to cook, preheat a grill to high and carefully oil the grill grate. Transfer the chicken to the preheated grill and cook for about three to five minutes per side. Remove from grill, let rest a couple minutes, then dice the chicken into bite-sized pieces.

Layer flour tortillas with grilled chicken, cotija cheese, and Pico de Gallo. Top with additional chopped cilantro if desired.
