This delicious and easy Chicken Gumbo features Smart Chicken Boneless Skinless Chicken Thighs, Smart Chicken Classic Bone Broth and Smart Chicken Andouille Sausage.

Ingredients

  • 1 pound Smart Chicken Boneless Skinless Chicken Thighs

  • 1 package Smart Chicken Andouille Sausage, cut on the diagonal

  • 4 cups Smart Chicken Classic Chicken Bone Broth

  • 4 Tablespoons unsalted butter

  • 4 Tablespoons flour

  • 1.5 cups white onion, small dice

  • 1 medium green bell pepper, small dice

  • 1 cup celery, chopped

  • 2 cloves garlic, minced

  • 1 Tablespoon Cajun seasoning

  • 1 (14oz) can fire-roasted tomatoes

  • 1 bay leaf

  • Kosher salt & pepper to taste

  • Garnish: ½ cup green onions, chopped

  • 4-6 cups cooked white rice or cauliflower rice for serving

Directions

Using a pressure cooker, place Smart Chicken Boneless Skinless Thighs in the cooking chamber and cover with water. Secure lid, placing the valve in the sealed position. Select pressure cook and set timer to 10 minutes. Once cooking is complete, do a fast release by immediately releasing the valve. When all the steam has escaped, remove lid and remove chicken thighs. Place chicken thighs on a cutting board and set aside allowing them to cool before chopping. While chicken thighs are cooking, prepare a roux. Using a stockpot or Dutch oven, warm butter over medium heat and add flour. Stir constantly and cook for about 10 minutes or until roux has reached a caramel color. Next, add vegetables (onions, celery, bell pepper and garlic) and cook an additional 3-5 minutes or until onions have softened. Add Cajun seasoning and mix well with vegetables. Next, add Smart Chicken bone broth and fire roasted tomatoes followed by Smart Chicken Andouille Sausage and bay leaf. Bring pot to a boil and then lower heat to a low simmer for about 45 minutes. When chicken thighs have been removed from cooking chamber and allowed to cool slightly, chop into bite size pieces and place in gumbo pot with the other ingredients once pot has simmered for at least 30 minutes. Serve gumbo over rice or cauliflower rice and garnish with chopped green onions if desired.
