Grilled Chicken Street Tacos

This recipe combines fresh Smart Chicken tenders, homemade taco seasoning, spicy sour cream and cilantro lime slaw. Full of flavor and texture, this mixture can be enjoyed in a tortilla or in a salad as a low-carb option.

(Serves 4-5)

Ingredients

  • 1 lb. Smart Chicken Tenders

  • 1 package street taco tortillas  

  • Optional garnish: lime wedges and cilantro

Marinade

  • 1/4 cup vegetable oil

  • 2 Tablespoon Taco Seasoning or see recipe below

  • Juice of 1 lime or 1 Tablespoon lime juice

Taco Seasoning

  • 1 Tablespoon Chili Powder

  • 2 teaspoons Cumin

  • 2 teaspoons paprika

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon oregano

Spicy Sour Cream

  • 1/4 cup of sour cream

  • 1 Tablespoon hot sauce of your choice

  • 1 Tablespoon lime juice

Stir to combine and chill until needed

Cilantro Lime Slaw

  • 1/2 cup thinly sliced cabbage

  • 1/2 cup sliced red cabbage

  • 2 teaspoon lime juice

  • 1/4 teaspoon salt

  • 1 teaspoon oil

  • 1 Tablespoon fresh cilantro 

Toss until combined and chill until needed

Directions

Combine ingredients for marinade with raw tenders and allow to marinate 1 hour. While the Chicken is marinating prepare taco seasoning, spicy sour cream and cilantro lime slaw. Once chicken has had time to marinate, pre heat grill. Once grill is hot, lay chicken top side down first to get nice grill marks and char for flavor. Turn in 8-10 minutes and continue to cook until an internal temp of 165°F is reached. Remove from grill and allow to cool slightly. Cut chicken into 1/2 inch cubes. Fill tortillas with slaw, chicken and top with spicy sour cream. Garnish with lime wedges and cilantro if desired.
