Grilled Chicken and Sausage Cobb Salad

This version of cobb salad features grilled Smart Chicken boneless skinless Chicken Breasts, sautéed Smart Chicken Spinach Asiago Sausage, lettuce, cucumber, cherry tomatoes, eggs and blue cheese.

Ingredients

  • 1 pound Smart Chicken Boneless Skinless Chicken Breast, grilled and carved into slices

  • 1 package Smart Chicken Spinach Asiago Sausage, cut on the diagonal

  • 2-3 cups green leaf lettuce, chopped

  • 1 cup Persian cucumber, coined

  • 1 cup cherry tomatoes, quartered

  • 4 eggs, hardboiled, peeled and sliced

  • ¼ cup blue cheese crumbles

  • Salad Dressing of choice

Simple marinade for chicken:

  • 2 Tablespoons Worcestershire

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon garlic powder

  • 2 Tablespoons vegetable oil

  • 1 Tablespoon parsley flakes

  • 1 cup water

Stir and combine all ingredients with raw chicken breast and allow to marinate for 4-6 hours before serving.

Directions

Preheat grill to medium high heat. Once chicken breast has had time to marinate, place chicken on grill at a 45-degree angle and then rotate after 3-4 minutes. After an additional 4 minutes, flip and repeat the process on the opposite side of the chicken. Make sure chicken reaches an internal temp of 165°F before removing from the grill. For sausage, sauté sliced sausage in a skillet over medium heat until sausage has started to brown or caramelize. To assemble salad, lay the lettuce as the base and top with grilled chicken breast, sausage, tomatoes, eggs, cucumbers and cheese. Serve with your favorite dressing.
