Gnocchi and Sausage

This comfort dish combines fresh homemade gnocchi and sautéed Smart Chicken Apple Gouda Sausage served with a homemade béchamel sauce seasoned with gouda cheese.

Ingredients

  • 1 package Smart Chicken Apple Gouda Sausage, cut on the diagonal

  • 2 Russet potatoes

  • 2 cups flour

  • 1 egg

  • ½ tsp Kosher Salt

  • 1/3 cup Asiago cheese

  • 2 Tablespoons unsalted butter

  • 2 Tablespoons flour

  • 1¼ cups milk, warmed

  • ½ cup gouda cheese. Shredded

  • Pinch white pepper

  • Chopped parsley for garnish

Directions

For gnocchi, start by bringing a pot of salted water to a boil. Peel potatoes and place them in pot and cook until tender. Remove and allow to cool. Combine potatoes, flour, egg and 1/3 cup asiago cheese in a bowl and knead until dough forms a ball. Divide dough into 5-6 equal portions and roll out each portion to make a small snake like shape. Cut pieces into ½ inch and set aside. For cooking gnocchi, bring a pot of salted water to a boil and gently place gnocchi into the pot once water is boiling. Cook until gnocchi rises to the top. Remove from the water and set aside. For the sauce, make a roux in a medium saucepan by warming butter over medium heat and add flour. Stir constantly and cook for about 2-3 minutes but do not let the butter brown. Add milk and bring to a boil. Lower heat to a low simmer for 5 minutes and add white pepper and ½ cup gouda cheese. Season with Kosher salt as needed. For sausage, sauté over medium high heat for 3-5 minutes or until sausage has started to brown and caramelize on edges. For serving, layer with gnocchi and drizzle with sauce. Top with sausage, chopped parsley and additional cheese if desired.
