Creamy Tarragon Chicken


Serves 4


  • 1 pound Smart Chicken drumsticks

  • 1 tablespoon olive oil

  • 8 ounces sliced shallots (or substitute onion)

  • ¼ cup dried tarragon

  • 1½ cup white wine

  • 2 cups heavy cream

  • Salt and pepper to taste

  • Pasta or mashed potatoes for serving


In a cast iron pan or large sauté pan, heat the olive oil over high heat. Season the chicken legs with salt and pepper and add to the pan. Sear all sides until golden brown. Add the sliced shallot and stir for about 2 to 3 minutes, add the white wine, tarragon, cream, salt and pepper and cover. Let simmer for about 25 minutes. Serve over pasta or mashed potatoes.
