Chicken Taco Lettuce Wraps

Serves 4


  • 1¼ pounds boneless skinless Smart Chicken breasts, sliced into thin strips

  • 3 tablespoons extra-virgin olive oil

  • ¾ cup water

  • Taco Seasoning (recipe follows)

  • 20 large butter lettuce leaves, rinsed and patted dry

  • Toppings such as: chopped fresh cilantro, diced avocado, diced red onion, shredded carrots,

  • shredded or crumbled cheese, salsa, and black or pinto beans


Heat oil in a skillet over medium heat. Add the chicken strips and cook until browned and cooked through. Add water and homemade taco seasoning. Bring to a boil. Reduce heat and simmer 10 minutes, or until water reduces. Serve with your choice of toppings.

Ingredients (for the Taco Seasoning)

  • ½ tablespoon chili powder

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • ¼ teaspoon crushed red pepper flakes

  • ½ teaspoon dried oregano

  • ½ teaspoon paprika

  • 1½ teaspoons ground cumin

  • ½ teaspoon sea salt

  • ½ teaspoon freshly ground pepper


In a small bowl or jar, mix all taco seasoning ingredients and set aside.
