Caprese Grilled Chicken Sandwich

This caprese grilled chicken sandwich is what dreams are made of. The chicken is juicy and tender and tastes so good with the fresh ripe tomatoes, melted mozzarella cheese and balsamic glaze. Oh, and don’t forget the toasted pretzel roll. It adds a layer of flavor that’s hard to resist.

Ingredients

  • 1 lb. Smart Chicken Boneless Skinless Chicken Breasts

  • 2 tablespoons olive oil

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 4 slices mozzarella cheese

  • 2 pretzel rolls

  • 4 slices tomato

  • 4 pieces butter lettuce

  • 2 tablespoons balsamic glaze divided

Directions

Preheat the grill to 475-500°F. Add foil to the grill. Toss your chicken with olive oil, salt and black pepper. Add the prepared chicken breasts to the grill.

Grill for 10-12 minutes on the first side. Turn the chicken over, reduce the heat to 400°F and grill for another 10-12 minutes or until the internal temperature reaches 165°F.

Add a few slices of mozzarella to the chicken. Once melted remove from the grill.

Build the Sandwich: Toast the pretzel rolls. Add one breast with cheese to each roll. Top with sliced tomatoes and lettuce. Drizzle with balsamic glaze. Top and enjoy.
