Balsamic Watermelon Chicken Salad

The unexpected (and tasty!) combination of chicken and watermelon is tied together with a sprinkling of feta and a drizzle of savory balsamic reduction.

Serves 4

Ingredients

  • 1 pound Smart Chicken boneless skinless breasts or tenders

  • 1 cup balsamic vinegar

  • 1 tablespoon olive oil

  • 3 teaspoons all-purpose seasoning

  • 4 cups spinach

  • 2 cups cubed watermelon

  • ½ cup feta crumbles

  • ¼ cup sliced almonds

Directions

In a small saucepan over high heat, pour the balsamic vinegar and bring to a boil. Reduce heat and simmer for 15 to 20 minutes, until the balsamic vinegar reduces and is thick enough to coat the back of a spoon.Meanwhile, bring a grill or nonstick skillet to high heat. Rub the olive oil on all sides of the chicken and sprinkle with seasoning. Transfer to the hot grill or pan and cook until the chicken is browned on both sides and registers 165˚F in its thickest portion. Remove the chicken from the pan or grill and let rest for 5 minutes; cut into small cubes. In four separate bowls, layer the spinach with the chicken, watermelon, feta, and almonds; drizzle with the balsamic reduction to taste.
