An herbaceous, creamy avocado dressing coats classic Waldorf staples for a deliciously easy recipe that’s great for lunch or a light dinner.
2 cups cooked Smart Chicken, cubed
1 large avocado, peeled, pit removed
3 tablespoons roughly chopped basil
2 tablespoons fresh lemon juice
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon pepper
1/3 cup diced celery
¼ cup diced red onion
½ cup halved grapes
1 apple, cored, cubed
¼ cup chopped walnuts
To a blender or the bowl of a food processor, add the avocado, lemon juice, olive oil, basil, salt, and pepper; blend until smooth and creamy, scraping sides as needed. Set aside.
In a medium bowl, combine chicken, celery, red onion, grapes, apples, and nuts. Stir in avocado dressing with other ingredients. Add additional salt and pepper to taste. Serve atop a bed of greens or in a lettuce or tortilla wrap.
