Makes about 3 cups
Tzatziki is a cool, creamy sauce that pairs well with just about anything. Try it with greens in a salad, on wraps and sandwiches, or as a dip for grilled, fried, or sautéed chicken.
2½ cups Greek yogurt
1 large cucumber, halved horizontally, seeds removed, and grated
1 clove garlic, minced
1 tablespoons chopped fresh mint
1½ teaspoons white wine vinegar
1 tablespoons olive oil
Salt, to taste
Pepper, to taste
Transfer the grated cucumber to a strainer and sprinkle with salt. Let rest for 10 minutes to extract moisture. In a medium bowl, combine the yogurt, cucumber, garlic, mint, vinegar, and olive oil and season with salt and pepper to taste. Cover and refrigerate at least 30 minutes before serving.
