Sonoran Hot Dog

Serves 4


  • 1 package Smart Chicken frankfurters

  • 4 bolillo or ciabatta rolls

  • 2 jalapeños, sliced

  • 1 cup pickled red onions (recipe follows)

  • 16 sprigs fresh cilantro

  • ½ cup mayonnaise

  • 1 (15-ounce) can pinto beans with jalapeños, drained

  • 2 avocados, sliced

  • 8 ounces cotija cheese


Preheat a grill to high. Meanwhile, add the pinto beans to a small saucepan over low heat. Grill the frankfurters and toast the buns. Add pinto beans to the bun and the frankfurter and top the hot dog with jalapeños, onions, cilantro, avocado, cotija, and mayonnaise.

Pickled Red Onions Ingredients

  • 1 large red onion, sliced thin

  • 1 cup apple cider vinegar

  • ½ cup red wine vinegar

  • 2 tablespoons sugar

  • 1 teaspoon salt

Pickled Red Onions Directions

In a saucepan, bring the vinegars, sugar, and salt to a boil and pour over the onion. Let cool to room temperature. Store in the refrigerator for up to one week.
