In South Carolina you’ll find a barbecue sauce unlike any other. Instead of the deep brown or red barbecue sauce you may be used to, many South Carolina barbecue sauces are yellow, with a significant amount of mustard. Yellow sauce is the perfect accompaniment to smoked Smart Chicken.
- 5 tablespoons butter
- 1 small onion, finely chopped
- 1/2 cup prepared mustard
- 1/2 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 tablespoon dry mustard
- 1 teaspoon red pepper flakes
- Salt and cracked black pepper to taste
In medium saucepan, heat butter over medium heat until melted. Add the onion; cook until tender. Add the additional ingredients. Simmer for 30 minutes. Store in the refrigerator until ready for use.
