This easy pesto is a departure from the traditional combination of fresh basil and toasted pine nuts with a nicely balanced flavor. Try it on spiralized veggie noodles, traditional pasta, grilled chicken, wraps, paninis, pizza, and more.
- 1 cup whole walnuts or walnut pieces, toasted
- 2 cups roughly chopped parsley (about 1 bunch)
- ½ cup grated Parmesan cheese
- 3 cloves garlic, chopped
- Salt, to taste
- ½ cup olive oil
In the bowl of a food processor, combine the walnuts, parsley, cheese, and garlic, and season with salt. Pulse to combine. Scrape the sides of the bowl then pulse again. With the food processor running, drizzle in the olive oil in a steady stream.
