Sweet Corn Relish
Easy Recipe

Makes about 1 1/2 quarts

My grandmother's recipe.

  • 12 ears fresh corn
  • 12 ripe tomatoes, peeled, seeded, and diced
  • 2 tablespoons salt
  • 2 green peppers, diced about the same size as the corn kernels
  • 2 red peppers, diced about the same size as the corn kernels
  • 1/2 teaspoon pepper
  • 1 cup cider vinegar
  • 1/2 cup water
  • 1 cucumber, diced about the same size as the corn kernels
  • 1/2 teaspoon turmeric
  • 1 cup sugar
  • 1 1/2 teaspoon mustard seed

Shuck the corn off the cob.

Mix all ingredients together in a pot. Cover and simmer for 45 minutes. Let cool and adjust the salt and pepper. You can store in jars and refrigerate or seal the relish in jars and process according to canning instructions.
