Sun-Dried Tomato Vinaigrette

  • ¼ cup olive oil
  • ¼ cup finely chopped shallots
  • ½ cup chopped sun-dried tomatoes
  • 1 clove garlic, crushed and finely chopped
  • ¼ cup red wine vinegar
  • ? cup dry white wine
  • ¼ teaspoon salt
  • ? teaspoon ground black pepper
  • 2 tablespoons capers

In a non-reactive bowl, combine all ingredients except oil. Add oil in a steady stream, whisking vigorously to emulsify. Let stand for 30 minutes before serving.
