Sun Dried Tomato & Caper Tapenade

  • 1 cup sundried tomatoes
  • ½ cup capers
  • ¼ cup fresh basil
  • ½ cup parsley
  • Zest and juice of 1 lemon
  • ½ cup Champagne vinegar
  • ½ cup olive oil
  • Salt
  • Pepper

In a blender or food processor, combine sundried tomatoes, capers, basil, parsley, lemon zest and juice, and vinegar. Blend until smooth, then add the olive oil until incorporated. Season with salt and pepper and refrigerate until ready to serve.
