Strawberry Habanero Chicken Wings

- Chicken Wings
- 1 pound Smart Chicken wings
- Olive oil
- Salt and pepper
- Blue cheese crumbles
- Toasted almonds
- Strawberry Habanero BBQ Sauce
- Makes 3 cups
- 2 tablespoons olive oil
- ½ cup diced red onion
- 1 habanero pepper, seeds removed and diced
- 2 (11.5-ounce) cans V8 vegetable juice
- ½ cup white distilled vinegar
- 2 tablespoons honey
- ½ cup packed brown sugar
- 1 cup strawberries, hulled
Preheat grill to high heat.
Toss the wings with a little olive oil, salt, and pepper. Grill the wings for about 15 minutes, flipping over halfway through, until they reach an internal temperature of 165°F. Remove the wings from the grill and toss with ¼ cup Strawberry Habanero BBQ sauce. Garnish the wings with blue cheese crumbles and toasted almonds.
Strawberry Habanero BBQ Sauce
In a medium sauce pot over medium-high heat, add olive oil, red onion, and habanero pepper. Cook until onions are soft and slightly caramelized, about 4 minutes. Add V8 juice, vinegar, honey, and brown sugar, and let reduce over medium-high heat for about 15 minutes. Stir in strawberries and remove from heat, allow mixture to cool. Add the sauce to a blender and puree until smooth.
