Southwest Chicken Burgers, Sliders, Or Meatballs

Serves 12

  • 3 pounds ground Smart Chicken
  • 1 large onion, finely chopped
  • 5 garlic cloves, finely chopped
  • 2 tablespoons olive oil
  • ½ cup dry white wine
  • 3 large eggs
  • ¾ cup herbed breadcrumbs (or substitute gluten-free breadcrumbs)
  • ¾ cup Slappy’s Southwest Spice Blend (recipe at right)
  • Lemon or lime zest (optional)

Chill ground meat in a stainless steel bowl. Meanwhile, sauté onion and garlic in hot olive oil until onions are translucent. Add Slappy’s Southwest Spice Blend and toast briefly. Deglaze pan with white wine, remove from heat, and chill. Beat eggs and add to chilled meat, then add the chilled onion mixture. Combine meat mixture with breadcrumbs and return to the refrigerator to chill briefly. After chilling, shape mixture into desired product (burgers, sliders, or meatballs). Cook in a pan or on a grill until brown on exterior and cooked through. You can also bake in a 400°F oven for about 30 to 40 minutes, until cooked through.

    • Slappy’s Southwest Spice Blend
    • ½ cup medium chili powder
    • ¼ cup freshly ground cumin seed
    • 2 tablespoons dry Mexican oregano
    • 2 tablespoons freshly ground coriander seed
    • 3 teaspoons cayenne pepper

    Combine spices. Store in clean, airtight glass or plastic container.
