Slow-Braised Crockpot Chicken For Tacos

Serves 6 to 8

  • 1 pound Smart Chicken thighs
  • 1 pound Smart Chicken drumsticks
  • 3 tablespoons canola oil
  • 1 cup fresh diced tomatoes
  • 1 cup rough cut sweet onions
  • 1 tablespoon minced garlic
  • 2 jalapeños, chopped
  • Pinch chile flakes
  • ½ cup white wine
  • 2 tablespoons taco seasoning
  • 2 tablespoons fresh cilantro
  • Salt, to taste

Preheat crockpot to high heat.

To a large skillet over medium-high heat, add canola oil and brown the chicken on all sides, in batches if necessary. Remove chicken from the pan and season with taco seasoning. To the same pan, add onions, garlic, and jalapeño and sauté for 5 minutes. Add tomatoes and chili flakes and stir. Deglaze with white wine. Transfer the chicken to the preheated crockpot and pour the vegetable mixture over it. Cook in the crockpot on high heat for 3 hours. Remove the chicken from the crockpot. Using tongs, pull all the meat apart, discarding the bones. Add a little sauce from the crockpot, stir in the fresh cilantro, and season well with salt.
