Radish & Sweet Corn Relish

This early summer mixture of sweet corn, radish, and tomato makes for a perfectly fresh complement to Smart Chicken Frankfurters or Polish sausages.
- 1 cup fresh or frozen sweet corn kernels
- 1 cup diced radish
- ½ cup chopped cherry tomatoes
- ¼ cup lime juice
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
In a medium bowl, combine all ingredients and mix well. Season with salt and pepper.
