Easy Recipe

Serves 4 to 6

  • 2 pounds Smart Chicken pieces (thighs, drums, wings, and breasts)
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 4 slices bacon, diced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • ¼ teaspoon rosemary
  • ½ cup dry white wine
  • ½ cup cream
  • 1 teaspoon tomato paste
  • 2 cups chicken broth
  • 3 pieces anchovies, minced

Rub the chicken pieces with the salt and pepper. In a Dutch oven or heavy frying pan, cook the bacon over medium heat until browned. Pour off the fat, then add the butter and oil. Add the chicken, garlic, and anchovies, and sauté until browned. Add the rosemary and wine, and cook over low heat for 15 minutes. Whisk the tomato paste, cream, and broth together, then add to the chicken. Cover and cook over low heat for 30 minutes or until chicken is cooked through.
