Pickled Radish & Spicy Cucumber Relish

Nothing takes a Frankfurter to the next level like a salty kick of pickled and spicy flavors. Taking its inspiration from savory Mexican flavors, this relish is the perfect addition to a spring or summer cookout.
- ½ cup rice vinegar
- 2 tablespoons sugar
- ½ teaspoon chili flakes
- Pinch of chipotle powder
- 1 jalapeno, thinly sliced
- 1 cup thinly sliced radish
- 1 cup thinly sliced cucumber
- ¼ cup cilantro leaves
In small bowl, mix the vinegar and sugar together until the sugar is dissolved. Add the chili flakes, chipotle, and jalapeno and mix well. Add the radish, cucumber and cilantro. Cover and refrigerate for about 40 minutes before using.
