Parmesan Chicken Strips
by Sally Hillis, R.D., Hillis & Company, Lincoln, Nebraska
Trust us, these don’t taste anything like those fast-food “tenders” you may be used to. These are made using tender, moist Smart Chicken, then topped with Parmesan cheese and crispy stuffing for added flavor and a zesty crunch.
- 1 pound chicken tenders
- 1 cup flour
- 2 tablespoons seasoned salt
- 2 eggs
- 2 tablespoons cold water
- 1 cup shredded Parmesan cheese
- 1 cup coarse chicken flavored stuffing mix, food processed into course crumbs
- 1/2 cup butter, melted
Mix together flour and seasoned salt in a bowl. In a second bowl, mix together the egg and water. In a third bowl, mix together Parmesan cheese and bread crumbs. Dip chicken tenders first in flour mixture, then into the egg and water mixture. Then press each side into the parmesan and bread crumb mix.
Place tenders on buttered baking sheet and bake at 400ºF for 20 to 25 minutes.
Pairing: Goes well with a sparkling Italian wine like prosecco, or a wheat beer.
