- 6 garlic cloves, peeled
- 3 tablespoons olive oil
- 6 medium avocados, peeled, pitted, and diced
- 2 tablespoons chopped cilantro
- Juice of 1 lime
- 1 teaspoon salt
- Black pepper, to taste
Preheat oven to 325°F.
To a small oven-safe dish, add garlic and olive oil. Roast in the oven for about 45 minutes. Remove from oven and let cool.
When the garlic cloves are cooled, combine with the avocado, cilantro, and lime juice and coarsely mash. Taste and season with salt. Add 1 tablespoon of the oil used to roast the garlic. Transfer to a serving bowl and cover with plastic wrap directly on the surface of the guacamole to prevent browning. Refrigerate until ready to serve.
