Mustard Balsamic Chicken

Serves 2

  • 1 pound Smart Chicken thighs
  • 2 teaspoons Dijon mustard
  • 4 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • Kosher salt, to taste
  • Pepper, to taste

In a medium bowl, whisk together the mustard, olive oil, lemon juice, vinegar, and garlic. Pour over chicken thighs and let marinate in the refrigerator overnight.

Season the chicken thighs all over with salt and pepper. In a large skillet, sear the thighs on both sides until golden brown, transfer to a baking dish and bake at 375°F for 15 to 20 minutes, or until chicken is cooked through (165°F in the center).
