Mexican Beer Marinade

Makes about 3 cups

  • 1 (12-ounce) bottle Corona (or other Mexican light beer)
  • 2 jalapeños, sliced
  • 1 bunch cilantro, roughly chopped
  • Juice of 2 oranges
  • ½ cup canola oil
  • 6 cloves garlic

In a food processor, combine all ingredients and pulse a few times, until all ingredients are chopped with no large chunks. Add the beer and mix. Pour over chicken, cover, and marinate in the refrigerator for at least one hour, or overnight.
