Makes about 3 cups

Fresh mint and juicy mango marry for a simple salsa with flavor that’s anything but.

  • 2 ripe mangos, peeled, pitted, and diced small
  • ½ diced red onion
  • 1 teaspoon minced garlic
  • 1 teaspoon finely minced jalapeño pepper, seeds removed
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste

In a medium bowl, combine all ingredients and fold together. Cover and refrigerate for 2 hours before serving.
