Mango Habanero Salsa

  • 1 small red onion, finely diced
  • 2 cloves garlic, minced
  • 1 ripe mango, diced small
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped fresh mint
  • Juice and zest of one lime
  • 1/4 habanero chile or 1 to 2 jalapeno chiles, seeded and finely chopped*
  • 1 tablespoon olive oil
  • Salt to taste

Combine all ingredients and season to taste.

*Wear gloves when you prepare the habanero chili.
