Lemon-Sage Compound Butter

Lemon and sage are perfect flavors for roasting chicken, and this compound butter brings them together nicely. Simply rub it over the surface of the bird and under the skin before roasting for a simple, flavorful dinner.
- 1 cup unsalted butter, at room temperature
- ½ lemon (juice and zest)
- ¼ cup chopped sage
- 2 teaspoons granulated garlic
- ½ teaspoon black pepper
- ½ teaspoon salt
- 2 tablespoons canola oil
In a bowl, combine all ingredients and mix well until incorporated. Transfer to a sealable container and refrigerate until ready to use.
