Makes about 12 to 15 sandwiches
- 1 (18-ounce) package dry cake mix (flavor of your choice)
- 2 eggs
- ½ cup butter, softened
- Ice cream flavor of your choice for filling, slightly softened
- Sprinkles, toasted coconut, mini M&Ms, chopped nuts, or shaved chocolate (optional)
Preheat oven to 350°F.
In a large bowl, combine cake mix, eggs, and butter at low speed until dry ingredients are moistened and dough is thoroughly mixed. Drop rounded teaspoonfuls 2 inches apart onto parchment-paper lined cookie sheets. Bake for 8 to 10 minutes. Cool for two minutes on cookie sheets before removing.
Before assembling the ice cream sandwiches, place ungreased cookie sheet and cookies in the freezer for 15 to 20 minutes. Remove ice cream from the freezer to soften slightly. Working quickly, place a small scoop of ice cream between two cookies. If desired, roll the ice cream sandwich in a bowl of sprinkles or other toppings. Transfer the ice cream sandwich to the cookie sheet in the freezer until ready to serve.
