Grilled Chicken Thighs With Spicy Strawberry-Basil Salsa

Serves 6

  • Zest and juice of 1 orange
  • Zest and juice of 1 lime
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • 12 boneless, skinless Smart Chicken thighs
  • Strawberry-Basil Salsa, for serving (recipe follows)

In a large bowl, combine citrus zest and juice, olive oil, honey, salt, and pepper and mix well. Add chicken thighs and toss to coat. Cover and refrigerate for at least one hour, or up to four.

Preheat grill to medium-high heat. Remove chicken thighs from the marinade (discarding marinade) and grill for 4 to 5 minutes per side, or until the internal temperature of the chicken reached 165°F. Transfer to a platter and let rest for 5 minutes. Serve with Strawberry-Basil Sala (recipe follows).

    • Strawberry-Basil Salsa
    • 2 cups chopped strawberries
    • ½ small red onion, diced
    • 1 jalapeño, seeds removed and minced
    • Juice of 1 lemon
    • 1 tablespoon honey
    • 5 fresh basil leaves, chopped
    • ¼ teaspoon salt
    • Freshly cracked black pepper

    To a small bowl, add all ingredients and mix well to combine. Adjust seasonings as needed and refrigerate until ready to serve.
