These simple Smart Chicken tacos add a quick and easy (and tasty) touch of Mexico to your table.
- 1/4 cup vegetable oil
- 1/2 cup lime juice (approx. 2 fresh limes)
- 1/2 cup fresh cilantro, chopped coarsely
- 2 garlic cloves, minced
- 2 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Whisk together the above ingredients in nonmetal container. Add 1 1/2 pounds boneless, skinless Smart Chicken Breast, turning to coat each side. Cover and refrigerate 2 to 4 hours, turning occasionally.

- 2 cups cheddar cheese, grated
- 1 large fresh tomato, diced
- sour cream
- fresh cilantro, chopped
Preheat grill to medium-high heat. Coat the hot grill with vegetable oil or spray. Grill chicken 4 to 6 minutes. Remove from grill, cover, and rest for 5 minutes.
Wrap tortillas in foil, and place on hot grate. Heat for about 2 minutes. Slice chicken breast and place on top of warmed tortillas. Serve with lettuce, cheese, tomato, guacamole, sour cream, salsa, and cilantro.
Pairing: A light, dry sauvignon blanc will blend nicely with the herbs and spices used in this dish.
