Grilled Chicken Sandwich With Pineapple BBQ Sauce

Makes 2 sandwiches

  • 2 boneless skinless Smart Chicken breasts
  • ¼ cup Greek Yogurt Marinade (recipe follows)
  • Salt
  • Pepper
  • 2 tablespoons olive oil
  • 2 slices fresh pineapple
  • 2 slices red bell pepper
  • 2 brioche burger buns
  • ½ cup Pineapple BBQ Sauce (recipe follows)

Marinate the breast in the Greek Yogurt & Pineapple Marinade for 2 to 3 hours. Preheat the grill to 350°F and then grill each side for 10 minutes, season well with salt and pepper. Brush pineapple and bell peppers with olive oil and grill for 2 to 3 minutes. Warm the brioche bun on the grill, then remove them to a plate. Add the Pineapple BBQ Sauce to each side. Layer with grilled pineapple, grilled bell peppers, and chicken breast to serve.

    • Greek Yogurt & Pineapple Marinade
    • 2 cups Greek yogurt
    • 1 cup pineapple juice
    • ¼ cup fresh lime juice
    • 1 tablespoon minced garlic
    • ½ cup fresh mint
    • 1 tablespoon sea salt
    • 1 teaspoon black pepper

    In a blender or food processor, combine all ingredients and blend into a smooth paste.

      • Pineapple Barbecue Sauce
      • 1 cup pineapple chunks
      • ½ cup pineapple juice
      • ½ cup brown sugar
      • ¼ cup liquid smoke (hickory)
      • 1 teaspoon chipotle chile powder
      • 1 tablespoon minced garlic
      • 1 tablespoon onion powder
      • 1 tablespoon Worcestershire sauce
      • 2 tablespoon whole-grain mustard
      • ½ teaspoon fresh cracked black pepper

      In a small stock pot, combine all ingredients. Bring to a boil, then reduce to simmer for two hours. Remove from heat and blend into a smooth sauce.
