Lahvosh (spelled variously) is an Armenian dish consisting of a large hard or soft cracker-like flatbread baked with assorted toppings. This version is light and quick, a perfect summer meal that combines savory marinated Smart Chicken from the grill with tasty, colorful fresh vegetables. Lahvosh is a quick, healthy, informal meal that will please your entire family. For additional variety, substitute matzo or naan for the lahvosh cracker.
- 1 large lahvosh cracker
- 2 boneless, skinless Smart Chicken breasts
- 1/4 cup Green vinaigrette/marinade
- 2 Roma tomatoes, seeded and chopped
- 1 6-ounce package button mushrooms, sliced
- 1 7.5-ounce jar quartered, marinated artichoke hearts
- 1 small can black olives, sliced
- 1/2 cup fresh spinach, chiffonade
- 8 ounces dill Havarti cheese, grated
Marinate chicken breasts in Greek vinaigrette/marinade for approximately 1 hour.
Preheat grill to medium-high heat. Coat hot grates with vegetable oil or cooking spray. Remove chicken from marinade, place on grill, and close lid. Grill until grill marks have formed and chicken is cooked through—about 6 minutes per side. Use a meat thermometer to ensure that the temperature has reached 165°F. Remove from heat, let rest for 5 minutes, then slice into 1/2-inch thick slices or bite-sized pieces.
While chicken is grilling, preheat oven to 375°F.
Place lahvosh cracker on a large cookie sheet or pizza stone. Top with tomatoes, mushrooms, artichoke hearts, olives, spinach, and chicken. Sprinkle with cheese and bake for 15 to 20 minutes, until the cheese has melted and the lahvosh is golden brown.
Remove from oven, cut into 8 pieces, and serve immediately.
