Vegetable gardens are typically overflowing with fresh cucumbers this time of year. Take advantage of the seasonal garden bounty by giving this cucumber salad a place on your table. Nothing says summer like produce that’s fresh from the garden!
- 4 medium cucumbers, thinly sliced
- 1 small yellow sweet onion, thinly sliced
- 1 cup apple cider vinegar
- 1/2 cup water
- 3/4 cup sugar
Toss together the cucumbers and onion in a large bowl. Combine the vinegar, water, and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions. Cover and place in the refrigerator for one hour or overnight. For a fun presentation twist, use small canning jars to serve this salad in individual portions.
