Chipotle Barbecue Sauce

Chipotle Barbecue Sauce

Makes 3 cups

  • 1 tablespoon canola oil
  • 3 cloves garlic
  • ½ large onion, diced
  • ½ tablespoon salt
  • ? cup chipotle peppers in adobo sauce, stems and seeds removed
  • ¾ cup apple cider vinegar
  • 1 cup brown sugar
  • 1 (14-ounce) can diced tomatoes
  • Salt and pepper, to taste

In a pot over medium heat, combine the oil, garlic, and onion, and sauté until soft. Add the remaining ingredients, stir to combine, and simmer for 45 minutes. Transfer mixture to a blender and blend until smooth. If the sauce is too thick, add a small amount of water to thin. Season to taste with salt and pepper. Serve with grilled chicken.
