Chicken Scampi Pasta With Mushrooms & Asparagus

Serves 2

  • 4 ounces Smart Chicken tenders, cut into ½-inch pieces
  • 2 ounces cremini mushrooms
  • 2 ounces asparagus, cut into ½-inch pieces
  • ⅓ cup white wine
  • 4 ounces cooked pasta (such as fettuccini)
  • 2 garlic cloves, thinly sliced
  • 5 basil leaves, torn in half
  • ½ cup chicken broth
  • 3 ounces grape tomatoes, halved
  • 2 ounces unsalted butter
  • Salt, to taste
  • White pepper, to taste

In a sauté pan over medium-high heat, add diced chicken and brown evenly on all sides. Remove the chicken from the pan and reserve. Add mushrooms to the pan, season with salt and white pepper, and sauté until golden brown, approximately 2 minutes. Add garlic, tomato, and asparagus, then carefully deglaze the pan with white wine. Cook until the liquid has reduced by half. Add pasta and reserved chicken. Finish with chicken broth, unsalted butter, and torn basil. Season to taste with salt and white pepper, then serve.
