Chicken Scaloppini

Serves 4

Scaloppini is a classic Italian dish featuring rich flavors and a creamy, wine-based white sauce. This version is built around chicken, and will melt in your mouth.

    • For The Chicken:
    • 1½ cups flour
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1 tablespoon granulated garlic
    • 1 pound Smart Chicken tenderloins
    • ½ cup olive oil
    • For The Sauce:
    • 8 tablespoons butter
    • ½ cup chopped shallots
    • 2 tablespoons minced garlic
    • 1 cup white wine
    • ½ cup heavy cream
    • 1½ cups chicken stock
    • 2 tablespoons chopped basil
    • ¼ cup lemon juice
    • ¼ cup capers
    • Salt
    • Pepper

    In a bowl, combine the flour, salt, pepper, and granulated garlic, and set aside. Lay the chicken tenders on a cutting board, cover with plastic wrap, and pound out thinly and evenly with a meat mallet. Lightly dredge the tender in the flour mixture. Heat olive oil in shallow frying pan and brown the tenders for about 1 minute on each side, then set aside. To the same pan, add butter, shallots, and garlic and cook until translucent. Deglaze the pan with wine and add the cream, stock, basil, lemon juice, and capers to the pan. Season with salt and pepper. Add the tenders back to the pan and let simmer for 5 to 10 minutes. Take off the heat and serve with pasta or your favorite starch.
