Chicken Salad With Black Grapes, Apples & Pecans

Serves 4

  • 1 pound boneless skinless Smart Chicken breasts
  • Drizzle of olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon coarsely ground black pepper
  • ½ cup mayonnaise
  • ⅓ cup sour cream
  • 1 teaspoon granulated garlic
  • ½ cup coarsely chopped pecan halves
  • 1 cup black grape halves
  • 1 medium Granny Smith apple, cut into ¼-inch pieces

Preheat oven or grill to 400°F. Lightly coat chicken breasts with olive oil and season generously with kosher salt and coarsely ground black pepper. Bake or grill until internal temperature of the chicken reaches 165°F. Let chicken rest for a few minutes. Cut chicken into cubes and transfer to a bowl. Add remaining ingredients and mix together to combine. Chill for at least two hours or overnight. Serve as a sandwich or on a bed of fresh lettuce.
