Chicken Salad Lettuce Wraps

Serves 2 to 4

  • 1 boneless skinless Smart Chicken breast, grilled and diced small
  • ½ cup diced celery
  • 1 cup diced apples
  • ½ cup walnuts, chopped
  • ½ cup almonds, chopped
  • 1 tablespoon minced shallots
  • Salt
  • Pepper

In a bowl, combine all ingredients. Season well with salt and pepper. Add dressing, a tablespoon at a time, until everything is coated. Adjust seasoning and refrigerate until ready to serve.

    • Dressing
    • 2 tablespoons Greek yogurt
    • ½ teaspoon cumin
    • ½ teaspoon garlic powder
    • 1 teaspoon lime juice
    • ½ teaspoon honey
    • 1 teaspoon Dijon mustard
    • Salt
    • Pepper

    In a medium bowl, combine all ingredients and whisk well until incorporated. Season with salt and pepper to taste.

      • For serving:
      • Freshly shaved radish
      • Cilantro
      • Fresh lettuce cups

      Scoop about 2 ounces of chicken salad into each lettuce cup and garnish with shaved radish and fresh cilantro leaves.

      Pairing: These are a great appetizer with Sauvignon Blanc
