Chicken Piccata With Sun-Dried Tomatoes

Serves 6

A “piccata” is an Italian dish that’s sautéed and served in a savory sauce—usually one containing butter, lemon, and spices. This one uses tender, moist Smart Chicken breasts, tasty sun-dried tomatoes, basil, and other spices—along with lemon zest for that added tang.

  • 6 boneless skinless Smart Chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 2 tablespoons chopped shallots
  • 2 tablespoons chopped garlic
  • 1 tablespoon chopped sun dried tomatoes
  • 1 tablespoon chopped basil
  • 2 tablespoons chopped green onions
  • 2 tablespoons capers
  • 2 lemons, zested and juiced
  • 1/2 cup dry white wine
  • 1/4 cup chicken stock or water
  • 1/4 cup chopped parsley
  • 1/2 cup soft butter
  • Salt and pepper to taste

In a large pan, mix butter and olive oil over high heat. Add chicken breasts and cook 6 to 7 minutes on each side. Remove from pan and set aside. Add shallots, garlic, and green onions. Sauté for three minutes. Add capers, sun dried tomatoes, lemon juice, lemon zest, and white wine. Cook for three more minutes. Add chicken stock or water, and cooked chicken, and cook for another three minutes. Add basil, parsley, and 1/2 cup soft butter; cook for a final three minutes. Season with salt and pepper to taste.

Pairing: Try a Meursault (French chardonnay) or a barrel-fermented buttery chardonnay
