Braised Broccolini

Serves 6

  • 1 tablespoon olive oil
  • 2 bunches broccolini, tough stems trimmed off
  • 1 tablespoon minced garlic
  • ½ cup dry white wine
  • 2 cups chicken stock
  • 1 tablespoon unsalted butter
  • 2 tablespoons lemon juice
  • 1 teaspoon chile flakes
  • Salt to taste

Heat the oil in a saucepan over medium heat. Add the broccolini and garlic and sauté for 2 minutes. Deglaze the pan with the white wine and fully reduce the wine. Add the chicken stock and reduce heat to a simmer. Cook for 20 minutes, stirring occasionally. Add the remaining ingredients and season with salt to taste. Serve immediately.
