Basil & Parmesan Chicken Meatballs

Serves 4

  • 1 pound ground Smart Chicken
  • 1 cup Parmesan cheese
  • ½ cup breadcrumbs
  • 1 egg
  • 2 tablespoons basil
  • 1 teaspoon fennel seed
  • 1 teaspoon sage
  • 1 teaspoon granulated garlic
  • Pinch chili flakes
  • Salt and pepper
  • Marinara sauce for serving

In a large mixing bowl, combine all ingredients until fully incorporated. Refrigerate the meatball mixture for 5 to 10 minutes. Using wet hands or a wet 1-ounce ice cream scoop, portion into equal-sized balls and refrigerate until ready to use. In a large pan, bring the marinara sauce to a low simmer. Drop the meatballs into the sauce and cook, stirring occasionally, until the meatballs are cooked through.
