This light and creamy dressing features healthy fats and a punch of lime. Use it to dress green salads, pasta salads, and rice bowls, or as a dip for fresh veggies, pita bread, or tortilla chips.
- 1 large avocado
- 2 tablespoons green onions, chopped
- 1 clove garlic
- ¼ cup shallots
- ¼ cup cilantro
- ½ cup lime juice
- ½ cup water
- ½ cup olive oil
In a high-speed blender, combine avocado, green onions, garlic, shallots, and cilantro and blend into a smooth purée. Add water and lime juice and continue to blend; season with salt and pepper. With the blender still running, slowly drizzle in the olive oil until the dressing becomes thick and creamy. Transfer into an air-tight container and refrigerate until need.
